Pumpkin Bars


Ingredients:

1 cup Cannon River Kitchens Original Flavor Pancake Mix
1 cup all-purpose flour
2 tsp baking powder
2 tsp cinnamon
1/2 tsp cloves
2 cups sugar
2 cups pumpkin (15 oz)
1/2 tsp salt
1 tsp baking soda
1/2 tsp ginger
1/2 tsp nutmeg
4 eggs
1/2 cup oil
1/2 cup water

Frosting:
1 - 3oz package cream cheese
1 tsp vanilla
1 3/4 cup sifted powdered sugar
3/4 stick butter
1 Tbl milk

Preheat oven to 350˚. Combine oil, sugar, pumpkin and water. Mix well. Add the sifted dry ingredients. Bake in a 10x15 greased and floured pan for 25-30 minutes.

Frosting:
Combine butter and cream cheese and mix well. Add remaining ingredients and blend until smooth.
