English Pancakes


Ingredients:

1 cup Cannon River Kitchens Original Flavor Pancake Mix
1 1/2 cups water
3 eggs
1 tsp lemon zest
lemon juice
sugar

Whisk together pancake mix, water, eggs and lemon zest. Allow to stand one minute. Preheat griddle to 375˚, lightly spray with oil if needed. Spoon batter onto griddle, spreading it out as you are spooning. Flip after two minutes. Squeeze lemon juice and sprinkle sugar to taste (about 1/2 tsp each). Roll up and eat!

Option: for a Swedish Pancake, substitute Lingonberry jam for the lemon and sugar.

Makes about 16 medium pancakes
